Curd mixed to whey is discharged on the draining roller that, thanks to a perforated surface, allows the excess whey to be separated from the solid matter.
\nWhey is conveyed into an accumulation vat by means of a centrifugal pump and by a tube and from here it is sent to a special tank for its storing.
\nCurd separated from the whey is sent, according to the used ripening: either on the draining trolleys (lactic ripening) or into an automatic draining group (citric or mixed ripening).<\/p>\n
